12 oz. Rotini - Tri Colors
2 tbs. Olive Oil
1/2 cup sun-dried tomatoes (packed in olive oil and herbs)
1/2 cup chopped basil
3 tbs. garlic, minced (for garlic lovers-use less if you are not)
3 tbs. Parmesan cheese
1/8 tsp. crushed red pepper (to crush finely place in coffee grinder)
1/8 cup pine nuts
1 tsp. salt

1. Bring 3 quarts water to a boil in Dutch Oven.
2. Add noodles to boiling water. Boil for approximately 8-10 minutes, until done.
3. Drain noodles. Rinse and toss them gently with cold water to avoid sticking, set aside in another bowl.
4. Heat 1 tbs. olive oil at medium to low heat in Dutch Oven for 1 minute. Add sun-dried tomatoes, basil, garlic, Parmesan, red pepper and pine nuts, keeping burner temperature just below medium. You may add a little water if mixture gets to dry. While constantly stirring, sauté for approximately 3 minutes.
5. Keeping burner at just below medium, return cooked noodles to Dutch Oven adding salt and remaining 1 tbs. of olive oil. Gently mix together until noodles are warm.
6. Serve hot. Also, delicious when reheated!
