Prepare in one pan and then slow cook.
1½ Tbs Butter
16 oz Mushrooms, fresh sliced
1 cup Almonds, slivered blanched
1 cup Brown Rice
2 cups Broth, (Low Sodium) chicken, beef or vegetable, (or water)
1 cup Water
¼ to ½ cup Red Peppers, diced
1 tsp Salt
1 tsp Mrs. Dash Lemon Pepper or other seasoning

1. Melt butter in 4 qt. utensil (the Gourmet Cooker unit); saute mushrooms, almonds and red peppers until tender. Cook on medium heat uncovered, tossing to cover with the butter, for about 2-3 minutes then cover and cook until tender. Volume will decrease by about 1/2. Do not fully cook as they will cook with the rice.
2. Add rice, broth, water, and seasoning. Cover with vapor valve open and cook on meduim heat until vapor escapes from the valve.
3. Close valve and place on Slo Cooker base. Set at #4 and slow cook for 1 hour or until rice is tender. There will be excess liquid as this is a casserole type dish.
4. When rice is tender, disconnect plug from the Slo Cooker Base. Keep covered until ready to serve.

Cooking Tips
This is a basic dish. Season as desired. You can also add items such as cooked shrimp, chicken, or tofu.
If cooking just brown rice in the Gourmet Cooker, use 1 cup rice to 2 cups water; bring to a boil on medium heat and then place on the Slo Cooker Base at setting #4 for 45 minutes. Too long a cooking time will give soggy rice.
